Elbow Lane, one of Cork’s most celebrated dining destinations, has named Joe Timbrell as its new General Manager, continuing the restaurant’s growth and innovation plans.
A native of Innishannon, West Cork, Timbrell (34) has been part of the Elbow Lane team for eight years.
Starting out as a barman, he steadily rose through the ranks thanks to his creativity and passion for hospitality.
Over the years, he has developed the restaurant’s acclaimed cocktail offering and is the creator of Joe’s Amaretto, which earned a Silver at the prestigious World Spirits Awards last year.
This standout spirit forms the base of Elbow Lane’s signature cocktail, The Sweet, The Smoked and The Sour.
Under Timbrell’s influence, Elbow Lane has embraced bold experimentation in its drinks programme.
Collaborations with local producers, like Rebel Distillery, have resulted in innovative brews such as Skiddys Sour—a beer aged in gin barrels.
The on-site fermentary continues to explore new culinary frontiers, using brewery by-products to create distinctive flavours that shape the restaurant’s evolving menu.
