Fancy combining chicken wings with a pizza to make a meal? Then you want Vice, the new food outlet on Merrion Street in Dublin, with its “elevated crusts and seriously saucy wings”.
Founder Bobby Lawn says the trick is bringing together two popular takeaway foods, the pizza and the wings, but created side by side “on an artisan production line”.
“It’s all about elevated sourdough crusts and sublime sauces paired with delectable free range wings,” he says.
Lawn, who numbers Etto, Osteria Lucio, and Pichet on his foodie CV, says he had a moment of clarity a couple of years ago while visiting family in Buffalo, New York.
After enjoying the pairing of pizza and wings, it occurred to him that both foods were destined to be enjoyed together and that a bespoke pairing didn’t quite exist as an offering in Ireland.
After a research and development period and a collaboration with the head chef at Anchor Bar in Buffalo, the concept of Vice was born.
'Elevated crusts' are described by Lawn as “big fluffy unapologetic pockets of air, finished with a choice of honey, poppy seeds, toasted black and white sesame seeds, dried garlic, onion or salt”.
Toppings, he adds, are equally as impressive, with fennel sprinkled cheese, chilli infused pineapple and pickled red onion all featuring.
“Sauces can be mixed and matched to suit your mood. If you fancy buffalo and BBQ tossed together to form your base, then no problem.”
Wing sauces — and the wings are free range — include lemon pepper, buffalo, and gochujang.
The first Vice outlet is at 5 Lower Merrion Street in Dublin, with delivery through Deliveroo and JustEat.
Roll the Vice Ltd, established by Bobby Lawn and Cian Gavin, raised €140,000 investment in July 2021, according to an allotment filing.
